Christmas is special, and the Christmas parties make it more special. Every year you host a party and get confused about the eatable items you should offer your guests this year and on the top of the list there is the Christmas cake. No doubt there are a huge variety of Christmas cakes available in the market and you can easily buy a Christmas cake but there are two issues in that. One there is a huge chance that your budget might get disturbed with it especially if you are hosting a big party and secondly the appreciation you will get by making a homemade cake is worth to put the effort in baking. So here i will tell you a great chocolate Christmas cake recipe and believe me all your guests will love it.
Actually the basic specialty if a Christmas cake is that is its full of fruits and nuts. And this amazing cake is not only a fruity delight but a great treat for chocolate lovers. This is the perfect cut-and-come again cake for any time of the year. It lasts for ages, but has the squidgy fabulousness of something so much less serviceable-sounding. There are a bit more ingredients in it but I can say that a little more work will help you to get a lot of appreciation.
What you will need:
- 1/3 cup grams prunes
- 1/3 cup grams raisins
- ½ cup of mix dry fruits Including almonds, walnuts, cashews
- 1 tea spoons orange peel
- 175 grams soft unsalted butter
- 175 grams dark brown sugar
- 175 ml runny honey
- 125 ml of 3 table spoon coffee in milk
- 2 – 3 oranges (juice and zest)
- 4 tablespoons cocoa
- 3 large eggs (beaten)
- 150 grams plain flour
- 75 grams ground almonds
- ½ teaspoon baking powder
- ½ teaspoon bicarbonate of soda
Decoration:
- 400 ml whipping cream
- 1cups Sugar
- Sugar soaked Cherries on tin
- few drops Vanilla extract
How to do it:
- In a large bowl mix all the fruits and nuts and put a side
- Pre heat the oven at 350 F.
- Take unsalted butter and add brown sugar in it and beat until light and fluffy. Now add honey, coffee milk, oranges zest and peel and beat until smooth.
- In another bowl beat eggs until light and fluffy. Now mix the eggs with butter mixture and slowly add flour and cocoa and fold. Also add almond powder, baking powder and baking soda at this stage. When the mixture is smooth enough add the fruit and nits to it and mix well.
- Now pour the mixture in in a 10 x 4 inch round pan.
- Bake it for 25-30 minutes or until the toothpick comes dry out.
Let the cake cool naturally by placing it on a wire rack.
Decorate it with sugar soaked cherries and whipped cream. For whipped cream, whip the refrigerated cream with caster sugar and vanilla extract for 10 minutes
